Happy Canada Day! (& the last of Salad Month)

watermelon feta saladI hope everyone’s out there enjoying beautiful weather, time with friends and family, and healthy BBQ eats this Canada Day. In honour of our Nation’s birthday, I thought I’d post my favourite side dish for barbeques – this amazing Watermelon Feta Salad from Two Peas and their Pod (currently my favourite food site).

This dish makes an awesome, cooling summer side that goes great with pretty much anything you throw on the grill.

Watermelon Feta Salad

Yield: Serves 6-8

Ingredients

  • 6 cups cubed watermelon
  • 1/2 red onion, chopped
  • 1/2 cup feta cheese
  • 1/3 cup fresh mint leaves, chopped
  • Balsamic vinegar-optional

Directions

In a large bowl combine watermelon, red onion, feta, and mint. Stir until ingredients are well combined.

Serve chilled.
