Breakfast Recipe: Apple Spice Rice Bake

One of the things I miss the most when I’m on the road is a good, solid breakfast. I’ve said it more than once on this blog, but breakfast is really the ringer when it comes to our daily meals. It sets you up to have energy throughout the day, especially if you choose something packed with nutrients.

I’m a lady who likes variety, so I rarely stick to the same thing for more than a few days. Which is why I was so excited to find this older recipe from Joyous Health, originally by Julie Daniluk, for something a little different than your usual oatmeal.

This apple breakfast bake is actually made with rice, so it’s great for those of you who can’t have gluten. It’s also free of refined sugars, and can be made vegan if you take the chia seed route instead of eggs (see below).

I made this for my husband and I a few weeks ago, so I can solemnly promise: your mornings are about to get a whole lot tastier.

 

Apple Spice Rice Bake

Ingredients

  • 2 cups cooked brown rice (or quinoa)
  • 1 cup almond milk
  • 1/2 cup chopped almonds
  • 3 tbsp real maple syrup (Want it sweeter? You could also add 4-5 drops stevia liquid)
  • 1 tbsp pure vanilla extract
  • 1/2 tsp nutmeg
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 2 cups apple, chopped (about 2 large apples) (keep the skins on if organic)
  • 3 large organic eggs, whisked, or 3 eggs substitutes ie. chia seeds

Directions

Pre-heat oven to 350F.

Use a fork to mix all the ingredients together in a large mixing bowl.

Pour into a greased 11 x 7 x 2 baking dish and bake for 35-45 minutes. If you are using an egg substitute, bake 15 minutes longer.

Remove from oven and cool for 10 minutes. Serve with plain yogurt and cinnamon sprinkled on top.

Makes 8 servings.
