Coconut Vanilla Chia Pudding – Yum!

Chia seedsHere’s a healthy recipe that helps me satisfy my sweet tooth cravings.

I also like to add fresh fruit – mango, raspberries, blueberries or kiwi.

I love using chia seeds as a desert option for creating a delicious “pudding like” treat. Chia seeds are an excellent source of fiber, good fat and protein. They can even be added to smoothies, oatmeal, or eaten on their own for breakfast, dessert or when you are having those mid afternoon cravings.

Ingrdients

  • 2 1/2 cups almond milk
  • scant 1/2 cup chia seeds
  • 1/2 cup shredded unsweetened coconut
  • 2 T coconut butter
  • 2 tsp ground vanilla beans or 1 tsp vanilla extract
  • 2 T maple syrup

Instructions

  1. Mix all the ingredients in a bowl and stir well.
  2. Cover the bowl and place it in the fridge overnight.

You can prepare this the night before to be ready in the morning. It should last a week or more in the fridge. If you plan on adding fresh fruit to this, do so right before eating. The mixture may seem watery when you make it, but it will thicken up in the fridge overnight. If the mixture is too thick in the morning, you can always add some extra milk.
