A Day of Detox: Afternoon Snack
This week I’m sharing my favorite recipes from Julie Daniluk‘s and Joyous Health‘s new detox programs, and arranging them into one day of good, clean, healthy detoxing.
Notice an energy slump at 2 or 3 pm every day? Instead of reaching for a coffee or a chocolate bar (both of which will give you a brief influx of energy, followed by another nasty crash), try eating a healthy balanced snack, like this a-maze-ing beet & cashew dip from Joyous Health.
Make up a batch of this dip on Sunday and take a couple of tablespoons every day with cut up veggies to work. You'll be satisfied, cleansed, and energetically balanced until dinner!
Beet Cashew Dip from Joyous Health
Ingredients
- 3 beets, unpeeled, cut into chunks
- 2 cups cashews, soaked in water for 3 hours or overnight
- 1 garlic clove
- 1/4 cup extra-virgin olive oil (evoo)
- Juice of 1 Lemon
- 1/2 tsp sea salt
- Black pepper to taste
Directions
Preheat oven to 350F degrees.
Place beets in a covered baking dish with 1/4 inch of water. Bake for 45-50 minutes or until beets are fork tender. Let cool slightly once cooked.
In a food processor, combine beets, cashews, garlic, evoo, lemon juice, sea salt and pepper. Blend until smooth or desired consistency.
Store in an airtight container for up to a week.
