May is Celiac Awareness Month!
Celiac Disease is an autoimmune disorder that causes the immune system to have a reaction to the protein gluten found in wheat, barley, and rye. Over time this damages the lining of the small intestine which leads to malabsorption of nutrients and serious related conditions, such as anemia.
While there is no cure for Celiac Disease, symptoms can be managed by following a strict gluten-free diet.
In recent years, gluten-free diets have become popular for many reasons including health benefits, weight loss, and gluten sensitivity, a less severe but more common reaction to the wheat protein.
While some celiac people have experienced some difficulties as a result of this, such as people, including some restaurants, not taking their condition as seriously under the assumption that they are part of a passing fad, there have also been some benefits to gluten-free going mainstream.
The most notable being the upsurge in available products and fabulous recipe ideas.
