Another Round of Weeknight Dinners for a Month
It’s that time. With back to school and many people also heading back into the office, inspiration for healthy eating feels called for.
I’ve pulled together another month’s worth of healthy weeknight dinners to get us through September.
Week One:
Easy Vegan Red Lentil Bolognese
An effortless, yet hearty vegan take on a classic
Grilled Chicken Zucchini Skewers
Don’t put the grill away just yet!
Vegan Thai-inspired fare that everyone will love.
Jackfruit is a fantastic substitute for shredded meat that is loaded with fibre.

If you’re not into game meats, you could use turkey or grass-fed beef.
Week Two:
If you’d like to add eggs, that’s delicious too.
Pistachio Crusted Baked Salmon
Seems VERY fancy, but on the table in under 30 mins!
Adult and kid-approved.
Lots of flavour without any marinating time.
Drooling.
Week Three:
It feels like time to bring in the Fall veggies!
Be sure to use grass-fed beef for this easy and tasty stir fry.
Coconut Curry Mussels with Zucchini Noodles
YUM. That’s it, that’s all I have to say. Oh and mussels are also a great source of B12 and Omega 3’s
For the nights you REALLY don’t want to cook. 10 minutes. No excuses.
Pan-Seared Lamb Loin Chops with Arugula Mint Pesto
To be served with roast potatoes of course.
Week Four:
For nights where you’re feeling like eating on the lighter side, without sacrificing any flavour!
No need to wait for Thanksgiving to enjoy this healthy protein.
Bring the Caribbean into your kitchen in less than an hour.
