Superfood Spotlight- It’s Almost Blueberry Season! Benefits and Recipes
It’s almost blueberry season! With blueberries starting to be ready in late June here on Vancouver island, I thought it was prime time to pick them for our Superfood Spotlight of the month, so that you could be ready to pounce the moment they’re ripe!
I’ve also included some yummy blueberry recipes to help you put them to good use.
Benefits of Blueberries
Blueberries are nutrient dense, while containing a low glycemic load– meaning they won’t spike blood sugar and much as other fruits.
Rich in Vitamin C- Blueberries are a good source of vitamin C, which is essential for many body processes such as wound healing, immune system, maintaining healthy bones and teeth, and iron absorption.
Good Source of Manganese- Blueberries contain manganese, which is necessary for many processes including brain function, nerve function, carbohydrate metabolism, blood sugar regulation, building connective tissue, and sex hormone production.
High in Antioxidants- Blueberries are sometimes called the “King of Antioxidant Foods.’ Antioxidants can help prevent ageing and cancer due to their protective quality against free radicals that cause cell damage.
